Title: Roasted Garlic Salad

Yield: 4 Servings

1 Red bell pepper, roasted,
  Peeled and cut into
  1/4-inch strips
3/4lbGreen beans, steamed tender
1 Head of garlic, roasted,
  Peeled,chop
3tbChopped, marinated
  Sun-dried tomatoes, drained
1tbChopped fresh basil leaves
2tbToasted pine nuts or chopped
  Walnuts
2tbHerbed olive oil
2tbBalsamic vinegar
3cChopped salad greens
  Salt and pepper to taste
1/2cGrated Asiago, Romano or
  Feta cheese

In large mixing bowl, toss all ingredients. Makes 4 servings.
